Of course there are hidden carbs if you are doing croutons, or raisins or sweetened dressings. However, more than that it’s the quantity of vegetables that you are not used to. Your bacteria might be overwhelmed, because they are eating fiber, fermenting fiber and because there is not enough friendly bacteria, you won’t have the enzymes necessary. There are two types of fiber: insoluble fiber, which is not fermented, but it acts as roughage, and there is soluble fiber, which is food for your micro-flora (good bacteria). Soluble fiber can hold a lot of water and even slow digestive transit time keeping a large quality of fiber trying to ferment in your colon – this is why you can be heavier the next day. It’s not extra fat, its more of a constipated water logged vegetation sitting in your colon. So try steaming your veggies, and switching up your salad to squash, cauliflower, broccoli and maybe some asparagus and slowing build up to the amount of plant food you need over time.
